Summer is coming and although its still spring, the weather has been hot enough for lots of outdoor play. My kids have been wanting all the cold treats like ice cream and popsicles and I wasn’t prepared at all. So we went out and bought them full sugar pops from the grocery store. You know, the rocket style with all of the sugar and color dye. GULP. This was definitely a “treat” and won’t be something I introduce the rest of the season.
Needless to say, I got on to making my own popsicles as soon as I was able to grocery shop. I bought some frozen organic mango, fresh pineapple and a can of full fat coconut milk. I wasn’t following any particular recipe but those ingredients sounded pretty good to me!
So here is what you will need for the perfect balance of all flavors:
1 can full fat coconut milk
2 cups of frozen mango (or fresh)
2 cups of fresh cut pineapple
Add all ingredients to blender and mix. ( I use the Vitamix and put it on the “smoothie” setting).
Pour into popsicle cups. I got 10 popsicles out of this recipe for the molds that I have. It will vary depending on what molds you own.
You will find that the mix has a gel like consistency, almost like half ready pudding.
If you find you have any left-overs, just add a handful of ice back in the blender with the left-overs and make a smoothie. Delicious!
